one of my first introductions to szechuan food, 麻婆豆腐, the first word “麻” which also means “numbing” is already indicative of the type of sensation one will have when you bite in. there are so many variation available online now, but the most authentic recipe usually includes bean curd, minced pork, tofu, ginger, garlic and chili sauce.
A really quick and tasty meal to make, topped over rice, you know you’ve done it right when you see a bright red layer of chili oil seeping down into your rice. success is mine! only thing is i forgot the green onions to go on top. 😦 so not as colorful as i would’ve liked, but tasty none the less. you can find the recipe here.
